Apple Muffins

Takes 40 minutes | Serves 12 |

Delicious apple muffins with a tender crumb, filled with diced apples and topped with a cinnamon sugar crust.

Ingredients

  • 180 g sugar
  • 180 g butter or margarine
  • 180 g all-purpose flour
  • 3 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla sugar
  • 0.5 dl milk
  • 3 apples, diced
  • 1 tsp cinnamon
  • 1 tbsp sugar (for topping)
  • 1 tbsp lemon juice (optional, for apple preparation)

Steps

    Muffin Preparation

    • Cream the butter and sugar until light and fluffy. Preferably use room temperature butter or margarine.
    • Beat in the eggs, one at a time.
    • Sift in the flour, baking powder, and vanilla sugar, and mix until you have a smooth batter.
    • Stir in the milk until fully incorporated.
    • Distribute the batter into about 12 large muffin cups. Fill the cups almost to the top and press in as many apple pieces as you can.
    • Sprinkle cinnamon and sugar on top.
    • Place the muffins in the middle of the oven at 180°C (356°F) and bake for 25-35 minutes, or until a toothpick inserted in the center comes out clean.
    • To prevent the apples from browning after peeling, place the pieces in a bowl of water with a bit of lemon juice added.
