Ingredients
- 400 g Puff pastry
- 5 apples Braeburn apples
- 100 g Unsalted butter
- 100 g Caster sugar for base
- some Plain flour for dusting
- 125 g Caster sugar for caramel sauce
- 125 g Double cream
Steps
- Peel, quarter, and deseed the apples. Spread softened butter in the base of a 20-24cm ovenproof frying pan and sprinkle with sugar. Arrange apples cut-side up in a fan pattern.
- Dust a surface with flour and roll out puff pastry to 0.5cm thick, covering the pan with a 5cm excess. Press the excess into the pan's edge and chill for 30 minutes.
- Preheat the oven to 190°C. Caramelize the butter and sugar mixture over medium-high heat, then bake for 25-30 minutes until pastry is golden.
- Caramelize sugar in a saucepan, add cream carefully, and stir to make a smooth sauce.
- Serve the tarte with caramel sauce and a scoop of clotted cream or ice cream.
