A delicious take on French toast with strawberries and coconut, perfect for a quick and tasty breakfast or dessert.
Ingredients
- 250 ml coconut milk
- 1 piece egg
- 1 pinch salt
- 8 slices white bread or brioche
- 200 ml desiccated coconut
- 50 g butter
- 1 basket strawberries
- 0.5 piece lime
- 30 g powdered sugar
- 1 tablespoon vanilla yogurt
Steps
- Wash and cut strawberries into small pieces. Mix the strawberries, lime juice, and powdered sugar in a small bowl. Adjust sweetness with more lime juice or sugar as desired. Set aside.
- Whisk together the egg and coconut milk in a deep plate, and season with a pinch of salt.
- Slice the bread and quickly dip each slice in the coconut milk mixture.
- Place desiccated coconut on another plate and coat the bread slices with coconut.
- Fry the slices in a pan over medium heat with a good amount of butter until the coconut is golden and toasted.
- Serve the French toast with a dollop of vanilla yogurt and topped with marinated strawberries and a bit of lime zest.
