French toast with strawberries and coconut

A delicious take on French toast with strawberries and coconut, perfect for a quick and tasty breakfast or dessert.

Ingredients

  • 250 ml coconut milk
  • 1 piece egg
  • 1 pinch salt
  • 8 slices white bread or brioche
  • 200 ml desiccated coconut
  • 50 g butter
  • 1 basket strawberries
  • 0.5 piece lime
  • 30 g powdered sugar
  • 1 tablespoon vanilla yogurt

Steps

    Preparation

    • Wash and cut strawberries into small pieces. Mix the strawberries, lime juice, and powdered sugar in a small bowl. Adjust sweetness with more lime juice or sugar as desired. Set aside.
    • Whisk together the egg and coconut milk in a deep plate, and season with a pinch of salt.
    • Slice the bread and quickly dip each slice in the coconut milk mixture.
    • Place desiccated coconut on another plate and coat the bread slices with coconut.
    • Fry the slices in a pan over medium heat with a good amount of butter until the coconut is golden and toasted.

    Serving

    • Serve the French toast with a dollop of vanilla yogurt and topped with marinated strawberries and a bit of lime zest.
