Arroz con Leche

Takes 45 minutes | Serves 6 |

Classic arroz con leche is a Mexican variation of rice pudding sweetened with condensed milk and topped with cinnamon.

Ingredients

  • 1000 ml water
  • 150 g long-grain white rice
  • 2 pieces cinnamon sticks
  • 200 ml sweetened condensed milk
  • 180 ml evaporated milk
  • 150 ml whole milk
  • some for topping ground cinnamon

Steps

    Cook the Rice

    • Combine water, rice, and cinnamon sticks in a large saucepan over medium-high heat.
    • Bring to a boil, uncovered, and cook for 16–18 minutes.

    Prepare the Pudding

    • Drain any remaining liquid, remove the cinnamon sticks, and return the rice to the pan over medium-high heat.
    • Add the sweetened condensed milk, evaporated milk, and whole milk, and bring to a boil.

    Simmer and Thicken

    • Reduce the heat to low and cook for about 20 minutes, stirring constantly. Be careful, as the milk can burn easily while thickening.

    Serve

    • Divide the rice pudding among serving cups and sprinkle with ground cinnamon. Serve warm.
