Basic Pot Bread

This recipe for pot bread is the perfect starting point for any baker. Simple and foolproof, it yields a delicious and hearty bread.
Ingredients
- 1 tsp fresh yeast
- 500 ml cold water
- 14 g salt
- 1 tsp sugar
- 650 g sifted wheat flour
- 325 g wholemeal flour
- 50 g flour for processing
- 10 ml oil
Steps
- Dissolve fresh yeast in cold water. If using dried yeast, mix it with the flour.
- Mix flour and salt into the dough. Adjust flour amount for proper consistency.
- Cover and let rise at room temperature for at least 12 hours.
- Fold dough on a floured surface four or five times.
- Shape into a round loaf and flour lightly.
- Grease a bowl, place dough inside, cover, and let rise for 2 hours.
- Preheat pot in oven at 250°C, then lower to 230°C for baking.
- Bake with lid or aluminum foil until golden and crisp, about 15-20 minutes.
- Cool on a grid before slicing.
