Blue mussels dressed for party

A tantalizing dish of blue mussels cooked in a fragrant broth of coconut milk, infused with a blend of fresh herbs and spices. Perfect for a festive gathering.
Ingredients
- 1000 g blue mussels
- 1 bunch coriander
- 3 cloves garlic
- 20 g ginger
- 0.5 stalk lemon grass
- 3 units spring onions
- 1 unit green chilli
- 1 unit lime
- some to taste olive oil
- 400 ml coconut milk
- 1 tsp cane sugar
- 45 ml fish sauce
Steps
- Rinse and chop half the coriander, including stems. Blend with garlic, ginger, lemon grass, spring onions, and deseeded chilli into a fine paste.
- Fry the green paste in olive oil, add coconut milk, then mussels. Cook covered for 5-7 minutes, shaking pan occasionally.
- Serve mussels with broth, garnished with spring onions, coriander leaves, and lime juice.
