Blue mussels dressed for party

A tantalizing dish of blue mussels cooked in a fragrant broth of coconut milk, infused with a blend of fresh herbs and spices. Perfect for a festive gathering.

Ingredients

  • 1000 g blue mussels
  • 1 bunch coriander
  • 3 cloves garlic
  • 20 g ginger
  • 0.5 stalk lemon grass
  • 3 units spring onions
  • 1 unit green chilli
  • 1 unit lime
  • some to taste olive oil
  • 400 ml coconut milk
  • 1 tsp cane sugar
  • 45 ml fish sauce

Steps

    Paste Preparation

    • Rinse and chop half the coriander, including stems. Blend with garlic, ginger, lemon grass, spring onions, and deseeded chilli into a fine paste.

    Cooking Mussels

    • Fry the green paste in olive oil, add coconut milk, then mussels. Cook covered for 5-7 minutes, shaking pan occasionally.

    Serving

    • Serve mussels with broth, garnished with spring onions, coriander leaves, and lime juice.
