A unique twist on the classic Caesar salad, featuring charred Brussels sprouts with a creamy dressing.

  • 400 g Brussels sprouts
  • 15 ml olive oil
  • 100 g ciabatta
  • 8 g
  • 150 g
  • 30 g

Steps

    Preparation

    • Trim and halve Brussels sprouts. Toss with olive oil and roast until charred.

    Dressing and Serving

    • Mix Greek yogurt, Parmesan, lemon juice, Worcestershire sauce, and mashed anchovy.
    • Tear ciabatta into croutons, fry with garlic and thyme.
    • Toss sprouts with dressing, top with croutons and extra Parmesan.
