Steps
- Preheat the oven to 180°C.
- Prepare ingredients: chop the chocolate, grate the carrots and apples.
- Whip together eggs, sugar, and oil until light. Sift in flour and dry ingredients, fold with a spatula. Stir in chocolate, then fold in carrots and apples.
- Pour batter into a 22x32 cm pan lined with parchment. Bake at 180°C for 50-60 minutes. Check doneness with a match. Cool in pan, then turn out.
- Mix room-temperature butter and powdered sugar, then whip in cream cheese and vanilla sugar. Spread over cooled cake.
- The cake can be refrigerated for several days or frozen without frosting.
