How to make homemade marzipan

    Preparing the Almonds

    • Boil water in a pot and add the almonds. Remove them when the brown shell starts to loosen, after a couple of minutes.
    • Place the almonds on a kitchen towel, fold it over, and knead. This loosens the shell. Squeeze the almonds out of their shells.
    • Dry the almonds well, either on low heat in the oven for about 1 hour, or longer on the kitchen counter. They can stay overnight if necessary.

    Making the Marzipan

    • Grind the almonds in a grinder or food processor one or two times.
    • Add powdered sugar and egg white, kneading into a firm dough. If dry, add more egg white.
    • For flavored marzipan, add lemon, cognac, or sherry, and food coloring if desired.
    • Wrap in plastic and let it rest in the fridge for at least a couple of hours.
    • Form into balls or figures, dip in chocolate and sprinkles if desired. Marzipan confectionery makes a great gift for Christmas or Easter.
