Coconut and Lime Chicken

Steps
- Heat olive oil in a large pan. Season the chicken with salt, pepper, and paprika. Cook until golden brown on both sides and remove from the pan.
- In the same pan, cook shallot and green chili over low heat for 3-5 minutes.
- Add ginger, garlic, and lime zest; heat for another 1-2 minutes.
- Pour in chicken stock, coconut milk, and coconut cream. Stir in the soy sauce.
- Return the chicken to the pan, cover, and cook for 10-15 minutes over low heat until the chicken is cooked through and the sauce has thickened.
- Serve the chicken topped with fish sauce, lime juice, dollops of reserved coconut cream, chopped coriander, and lime slices.
