Dakos Salad

Takes 15 minutes | Serves 4 |

A refreshing Greek salad featuring Cretan rusks, tomatoes, capers, olives, and vegan cheese, dressed with olive oil and red wine vinegar.

Ingredients

  • 20 units sweet cherry tomatoes
  • 2 units medium tomatoes
  • 1 tbsp capers
  • 8 units Kalamata olives
  • 0.5 units red onion
  • 6 units Cretan rusks or other crispbread
  • 1 tbsp fresh parsley
  • 1 tsp dried oregano
  • 100 g vegan cheese (feta or soft cheese)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp black pepper
  • 1 tsp salt

Steps

    Preparation

    • Break rusks into smaller pieces with a hammer or use your hands.
    • Place chopped tomatoes, capers, and olives in a large mixing bowl.
    • Mix olive oil and red wine vinegar together and pour over the mixing bowl’s contents.
    • Throw in the broken rusks and mix well.
    • Season with black pepper and possibly a tiny bit of salt – go easy as capers, olives, and cheese all have salt in them already.
    • Place in a salad bowl, dot with vegan cheese, and sprinkle with dried oregano and fresh parsley.
