Dubai Chocolate

A luxurious chocolate treat filled with crispy kataifi pastry and pistachio paste, decorated with vibrant chocolate splashes.

Ingredients

  • 150 g kataifi pastry
  • 60 g butter
  • 360 g pistachio paste
  • 20 g tahini
  • 1 pinch salt
  • 500 g dark or milk chocolate
  • 100 g pink chocolate
  • 100 g green chocolate
  • 2 tbsp coconut oil

Steps

    Prepare the Kataifi Filling

    • Melt the butter over medium heat in a high-sided frying pan.
    • Add kataifi pastry, breaking it up and stirring frequently until golden and crisp (about 10 minutes).
    • In a bowl, mix pistachio paste, tahini, and salt until well combined.
    • Add the toasted kataifi and mix thoroughly. Set aside.

    Create the Decorative Chocolate Splashes

    • Place both molds on a tray.
    • Melt pink chocolate and mix in 1 tbsp coconut oil.
    • Flick pink chocolate over the mold using a teaspoon to create a splash pattern.
    • Melt green chocolate, mix in 1 tbsp coconut oil, and flick over the pink splashes.
    • Place molds in the fridge to set.

    Coat the Molds with Chocolate

    • Melt dark or milk chocolate until smooth.
    • Spoon melted chocolate into molds, ensuring full coverage inside.
    • Let excess chocolate drip off while making sure sides are fully coated.
    • Scrape off excess chocolate from the edges.
    • Place in the fridge to set.

    Assemble and Set the Chocolate

    • Spoon kataifi-pistachio mixture into molds, spreading evenly with an angled spatula.
    • Pour remaining melted chocolate over filling and smooth with a spatula.
    • Use a chocolate scraper to clean edges for a professional finish.
    • Allow chocolates to set completely in the fridge before unmolding.
