A delightful festive gnocchi recipe featuring homemade gnocchi, cavolo nero, garlic, and a blend of Gorgonzola and walnuts, perfect for a vegetarian feast.

Ingredients

  • 800 g Maris Piper potatoes
  • 80 g plain flour
  • 1 item free-range egg
  • 6 cloves garlic
  • 400 g cavolo nero
  • 50 g Parmesan cheese
  • 6 tablespoons extra virgin olive oil
  • 50 g shelled unsalted walnuts
  • 100 g Gorgonzola cheese

Steps

    Gnocchi Preparation

    • Wash and chop potatoes into chunks, boil until tender, drain, steam dry, mash, and cool.
    • Mix in flour, add egg yolk, season, and knead into a pliable dough. Divide and shape into gnocchi pieces.

    Sauce and Cooking

    • Boil water, cook garlic and cavolo nero leaves, then blend with olive oil and Parmesan to make the sauce.
    • Cook gnocchi in boiling water until they float. Combine with sauce, sprinkle Parmesan, walnuts, and crumble Gorgonzola on top.
