How to make Fruit Caviar

This fruit caviar is a playful and unique dessert that uses agar agar to transform fruit juices into delightful beads, resembling caviar.

  • 1 teaspoon agar agar
  • 200 ml

Steps

    Preparation

    • Take orange juice and grapefruit or any other fruit juice in two different saucepans.
    • Add half of the agar agar to the orange juice and the other half to the grapefruit juice, then mix.
    • Bring both juices to a boil, stirring constantly, then remove from heat and let sit for 3-4 minutes.
    • Using a syringe, pull the orange juice mixture and drop it drop by drop into the cold sunflower oil. The drops will solidify and sink.
    • Strain the oil to collect the solidified orange juice beads. Wash them in cold water.
    • Repeat the process with the grapefruit juice mixture to form grapefruit juice beads.
