How to make Fruit Caviar

This fruit caviar is a playful and unique dessert that uses agar agar to transform fruit juices into delightful beads, resembling caviar.
Ingredients
- 200 ml

- 1 teaspoon agar agar
- 200 ml
Steps
- Take orange juice and grapefruit or any other fruit juice in two different saucepans.
- Add half of the agar agar to the orange juice and the other half to the grapefruit juice, then mix.
- Bring both juices to a boil, stirring constantly, then remove from heat and let sit for 3-4 minutes.
- Using a syringe, pull the orange juice mixture and drop it drop by drop into the cold sunflower oil. The drops will solidify and sink.
- Strain the oil to collect the solidified orange juice beads. Wash them in cold water.
- Repeat the process with the grapefruit juice mixture to form grapefruit juice beads.
