Helmer's Apple Cake

A deliciously moist apple cake, featuring a sweet and spicy apple layer within and topped with beautifully arranged apple wedges.

Ingredients

  • 200 g

Steps

    Batter Preparation

    • Whip butter and sugar until light and fluffy. Beat in one egg at a time. Sift flour and baking powder and fold into the batter.

    Apple Preparation

    • Peel the apples and cut them into wedges.

    Cake Assembly

    • Put half of the batter in a round pan (22 cm in diameter) lined with parchment paper. Place half of the apple wedges on the batter, pressing them slightly into the mixture. Sprinkle with cinnamon and sugar. Spread the remaining batter on top, smoothing out the surface. Arrange the remaining apples on top in a nice pattern, and sprinkle with more cinnamon and sugar.

    Baking

    • Bake the cake on the bottom rack of the oven at 170°C for about 45-50 minutes. Check with a cake tester to ensure it's done. Cool the cake in the pan.
