Steps
- Mix oats, almonds, cashews, pumpkin seeds, sunflower seeds, dried cranberries, raisins, and chia seeds in a large bowl.
- In a small saucepan, gently heat the honey (or maple syrup), vanilla extract, and a pinch of salt until fully combined and slightly runny.
- Pour the liquid mixture over the dry ingredients and mix thoroughly until everything is evenly coated.
- Line a baking tray with parchment paper.
- Transfer the mixture to the tray, pressing down firmly into an even layer about 1cm thick.
- Chill in the refrigerator for at least 1 hour, or until set.
- Once set, remove from the refrigerator and cut into bars.
- Store in an airtight container in the refrigerator for up to a week.
