
Homemade Marshmallows

Soft, fluffy homemade marshmallows with a hint of vanilla.
Ingredients
- 3 large egg whites
- 250 g sugar
- 100 ml water
- 1 tbsp glucose syrup
- 1 tbsp or 4 sheets gelatin powder or gelatin sheets
- 1 tsp vanilla extract
- 50 g powdered sugar
- 50 g cornstarch
Steps
- If using gelatin powder, mix it with 50 ml (3 tbsp) of cold water and let it bloom.
- If using gelatin sheets, soak them in cold water for about 5 minutes until softened.
- In a saucepan, combine sugar, water, and glucose syrup.
- Bring to a boil and let it simmer until it reaches 120°C (250°F) using a candy thermometer.
- While the sugar syrup is cooking, beat the egg whites in a large mixing bowl until stiff peaks form.
- Melt the bloomed gelatin in the microwave (about 10 seconds) or stir it directly into the hot sugar syrup.
- Slowly pour the hot syrup into the whipped egg whites in a thin stream while mixing on low speed.
- Increase the mixer speed and whip for about 5–7 minutes until the mixture becomes thick, white, and slightly cooled.
- Add the vanilla extract towards the end.
- Mix equal parts powdered sugar and cornstarch and dust a small rectangular pan with the mixture.
- Pour the marshmallow mixture into the pan and smooth the surface with a spatula.
- Sprinkle more powdered sugar-cornstarch mixture on top.
- Allow the marshmallows to set at room temperature for at least 4 hours, preferably overnight.
- Use a sharp knife (lightly greased with oil) to cut the marshmallows into squares.
- Toss the marshmallow pieces in the powdered sugar-cornstarch mixture to prevent sticking.
