    • Combine the milk, cream, and salt in a large pot. Slowly heat the mixture over medium heat, stirring occasionally.
    • Once the milk mixture reaches about 88°F (190°C), add the vinegar or lemon juice and gently stir.
    • Remove the pot from heat and let it sit undisturbed for about 10 minutes.
    • Carefully ladle or pour the mixture into the prepared sieve. Let the curds drain for 20-30 minutes, depending on desired consistency.
    • Transfer the ricotta to a container for immediate use or storage in the refrigerator.
