Lavashak, a traditional Persian snack, is a tangy and sometimes sweet fruit leather. This simple recipe lets you preserve your favorite fruits in a delicious, snackable form.
Ingredients
- 600 g fruit puree (plums, apricots, cherries, apples, or mix)

Steps
- Wash and pit chosen fruits, chopping larger ones. No need to peel unless skin is thick or bitter.
- Cook fruit over medium heat until soft, adding water if too dry.
- Cool slightly, then puree in blender. Strain for smoother texture if desired.
- Add sugar/honey for sweetness, lemon juice for tartness, and a pinch of salt. Mix well.
- Preheat oven to 75°C. Line baking sheet with parchment paper or silicone mat.
- Spread puree evenly on sheet, 1/4 inch thick.
- Dry in oven for 4-8 hours until leather-like texture is achieved.
- Let cool, peel off, and cut into desired shapes.
- Store in airtight container, room temperature for short term or refrigerate for longer.
