Minestrone

A hearty and flavorful Italian minestrone soup, perfect with a side of focaccia.

Ingredients

  • 1 unit onion
  • 4 tablespoons olive oil
  • 150 g bacon or pancetta
  • 2 cloves garlic cloves
  • 1 teaspoon fresh chili or cayenne pepper
  • 2 unit celery stalks
  • 2 unit carrots
  • 1 can canned chopped tomatoes
  • 700 ml vegetable broth
  • 200 g cooked white beans or lentils
  • 150 g cooked pasta (bows, penne, or macaroni)
  • 200 g green beans
  • 8 unit small turnips
  • 2 tablespoons chopped herbs (chervil, basil, parsley)
