- Choose the Right Potatoes: Use Russet potatoes for their high starch content, aiding in a crispy exterior and fluffy interior.
- Cut Evenly: Cut your potatoes into evenly sized sticks, about 1/4 inch in thickness.
- Soak in Cold Water: Soak the cut potatoes in cold water for at least 30 minutes or up to a few hours to remove excess starch.

- Fry twice. The secret to peerfect French Fries is double frying. First Fry (Blanching): Fry the potatoes at a lower temperature of about 150°C for about 4-5 minutes. This process is called blanching and it cooks the potato without giving it color.
- Cool down: Remove the fries from the oil, drain them on a wire rack or a plate lined with paper towels, and let them cool to room temperature for about 30 minutes.
- Increase oil temperature: Increase the oil temperature to 190°C for the second fry. The higher temperature will give the fries their golden color and crispy texture.
