Soft Caramels

Delicious homemade soft caramels made with condensed milk, butter, brown sugar, and vanilla.
Ingredients
- 400 g sweetened condensed milk
- 100 g butter
- 200 g brown sugar
- 4 tbsp light syrup
- 1 piece vanilla bean
Steps
- Place the condensed milk, butter, brown sugar, and syrup in a non-stick saucepan.
- Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the saucepan.
- Heat the mixture over medium heat, stirring constantly until it comes to a boil.
- Reduce the heat and let the caramel simmer gently for 10-12 minutes, stirring continuously to prevent burning.
- Line a small baking dish or loaf pan (approximately 15 x 20 cm / 6 x 8 inches) with parchment paper.
- Lightly grease the paper with cooking spray or butter to make removing the caramels easier.
- Pour the caramel mixture into the prepared dish. Let it cool to room temperature, then place the dish in the refrigerator for at least 4 hours, or preferably overnight.
- Cover the dish with plastic wrap while it chills.
- Once the caramel has set, lift it out of the dish using the parchment paper.
- Cut the caramel into small squares or rectangles, and wrap each piece in wax paper or cellophane.
