Spaghetti Vongole

A classic Italian pasta dish combining the simplicity of spaghetti with the rich flavors of vongole clams. An ideal representation of Italian cuisine's focus on quality ingredients and harmonious flavors.

Ingredients

  • 1 net vongole clams
  • 2 ts olive oil
  • 2 item shallots
  • 3 item garlic cloves
  • 1 ts chili flakes
  • 200 ml white wine
  • 300 g spaghetti
  • 2 ss finely chopped parsley
  • 1 item lemon slice

Steps

    Preparation

    • Soak vongole clams in cold water with a bit of salt. Discard any broken clams.
    • In a large pot with a lid, sauté finely chopped shallots, chili flakes, and garlic in olive oil until soft.
    • Add white wine and cook for a few minutes, then add the vongole clams. Cover and steam for about 4 minutes.
    • Cook spaghetti for 2-3 minutes less than package instructions. It should be undercooked.
    • Transfer the spaghetti to the pot with clam juice, adding cooking water as needed while the pasta finishes cooking.
    • Return the clams to the pot, mix well. Season with salt, pepper, and lemon juice. Drizzle with olive oil and sprinkle with parsley.
    • Serve the spaghetti vongole immediately.
