The French Taco

A fusion of Mexican inspiration and French culinary twists, these tacos swap traditional rice and beans for chips and cheese, enveloped in a massive tortilla and pressed to perfection. Experience a taste of Paris with every bite.

  • 2 unit large tortillas
  • 100 g grated mozzarella
  • 100 g oven chips
  • 2 unit
  • 50 g pickled jalapeños
  • 0.5 unit lemon juice
  • 1 tbsp tomato paste
  • 1 tbsp harissa paste
  • 1 unit small onion
  • 240 g mayonnaise
  • 1 handful coriander
  • 410 ml evaporated milk
  • 120 g Red Leicester cheese
  • 120 g Cheddar cheese
  • 1 tbsp cornflour
  • 1 unit red chilli
  • 1 tsp hot chilli powder
  • 1 tbsp hot sauce

Steps

    Sauce Algérienne

    • Combine lemon juice, cumin, paprika, chilli powder in a bowl. Add tomato paste, harissa, then onion, mayonnaise, coriander, salt and pepper; whisk well.

    Nacho Cheese Sauciness

    • Heat evaporated milk in a saucepan over medium heat. Mix cheeses with cornflour, add to pan with chilli, chilli powder, hot sauce; whisk until thickened.

    French Tacos

    • Marinate chicken in oil, spices. Fry merguez, set aside. Cook chicken and peppers until done. Assemble tacos with sauces, cheeses, chips, and toppings.
    • Cook in panini press or on griddle until crisp and golden.
