Tomatillo Salsa Verde

A tangy, fresh salsa made from broiled tomatillos, perfect as a dip or accompaniment to Mexican dishes.
Ingredients
- 680 g tomatillos
- 120 ml white onion
- 2 cloves garlic cloves
- 120 ml cilantro leaves and stems
- 15 ml fresh lime juice
- 2 peppers jalapeƱo or serrano peppers
- 1 to taste Salt
Steps
- Set the oven rack about 15 cm from the heating element.
- Remove the papery husks from the tomatillos and rinse them well.
- Cut the tomatillos in half and place them cut side down on a foil-lined baking sheet.
- Add a few garlic cloves in their skins (if using). Place under the broiler for about 5-7 minutes to lightly blacken the skins of the tomatillos.
- Place the cooked tomatillos, lime juice, onions, garlic (if using), cilantro, and chili peppers in a blender or food processor.
- Pulse until all ingredients are finely chopped and mixed.
- Season with salt to taste.
- Cool, then refrigerate. Serve with chips or as a salsa accompaniment to Mexican dishes.
