Ingredients
- 1 sheet high-quality puff pastry
- 4 whole ripe pears
- 1 cup granulated sugar
- 1 cup unsalted butter
- 1 whole vanilla bean
- 1 tablespoon fresh rosemary
- 1 tablespoon lemon juice

- 1 serving Crème fraîche or vanilla ice cream
Steps
- Preheat your oven to 375°F (190°C).
- In a heavy, ovenproof skillet, melt the butter over medium heat. Add the sugar and cook, stirring occasionally, until it turns a deep amber caramel.

- Arrange the pear quarters in the skillet, cut side up, in a circular pattern. Cook for about 10 minutes, allowing the pears to soften slightly and absorb the caramel.
