  • 1 sheet high-quality puff pastry
  • 4 whole ripe pears
  • 1 cup granulated sugar
  • 1 cup unsalted butter
  • 1 whole vanilla bean
  • 1 tablespoon fresh rosemary
  • 1 tablespoon lemon juice
  • 1 pinch salt
  • 1 serving Crème fraîche or vanilla ice cream

Steps

    Preparation

    • Preheat your oven to 375°F (190°C).

    Caramelizing the Pears

    • In a heavy, ovenproof skillet, melt the butter over medium heat. Add the sugar and cook, stirring occasionally, until it turns a deep amber caramel.
    • Stir in the vanilla bean seeds, rosemary, lemon juice, and salt.
    • Arrange the pear quarters in the skillet, cut side up, in a circular pattern. Cook for about 10 minutes, allowing the pears to soften slightly and absorb the caramel.

    Assembly

    • Roll out the puff pastry on a lightly floured surface and cut it into a circle slightly larger than the skillet.
    • Carefully place the puff pastry over the pears, tucking the edges down around the fruit.

    Baking

    • Transfer the skillet to the oven and bake for 25-30 minutes, or until the pastry is golden brown and puffed.

    Serving

    • Remove from the oven and let it cool for a few minutes. Place a serving platter over the skillet and carefully invert the Tarte Tatin onto the platter.
