Steps
- Rinse beans and lentils thoroughly, and spread them on a baking tray lined with parchment paper alongside pickled beets and sliced mushrooms.
- Bake at 200°C (fan setting) for 1 hour.
- Pulse walnuts in a blender to a sand-like consistency and transfer to a large bowl. Repeat with Parmesan cheese.
- Blend the oven-baked ingredients with spices, soy sauce, and Worcestershire sauce in a food processor, adding a little water as needed.
- Combine the mixture with nuts and cheese, sprinkle over corn flour, and knead into a sticky dough.
- Shape the mixture into 175g burgers and refrigerate for at least 2 hours, ideally overnight.
- Fry burgers over medium-high heat until they achieve a golden crust, about 3-5 minutes per side. Assemble the burger to your preference, adding layers of vegetables, your choice of cheese, and a variety of dressings or sauces to enhance the flavors.
