Ingredients
- 1 lb mixed seafood (shrimp, mussels, clams, squid)

- 1 unit onion, finely chopped
- 2 unit garlic cloves, minced
- 1 cup white wine or cognac
- 14 oz can crushed tomatoes
- 4 cups fish stock
- 1 to taste Salt and freshly ground black pepper
- 1 to taste Fresh parsley, chopped, for garnish
- 1 to taste Lemon wedges, for serving
- 1 to taste Toasted garlic bread, for serving
Steps
- Ensure all seafood is cleaned and deveined. For mussels and clams, scrub the shells and remove any beards.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Pour in the white wine or cognac, stirring to deglaze the pan. Allow the alcohol to evaporate slightly, enhancing the depth of flavor.
- Add the crushed tomatoes and fish stock to the pot. Bring to a simmer, seasoning with salt and black pepper.
- Add the mixed seafood to the pot, ensuring it is submerged in the broth. Cover and cook for about 5-7 minutes, or until the seafood is cooked through and the shells have opened.
- Adjust seasoning if needed. Serve the soup hot, garnished with fresh parsley and accompanied by lemon wedges and toasted garlic bread.
