Ingredients

  • 1 lb mixed seafood (shrimp, mussels, clams, squid)
  • 2 tbsp extra virgin olive oil
  • 1 unit onion, finely chopped
  • 2 unit garlic cloves, minced
  • 1 cup white wine or cognac
  • 14 oz can crushed tomatoes
  • 4 cups fish stock
  • 1 to taste Salt and freshly ground black pepper
  • 1 to taste Fresh parsley, chopped, for garnish
  • 1 to taste Lemon wedges, for serving
  • 1 to taste Toasted garlic bread, for serving

Steps

    Preparation of Seafood

    • Ensure all seafood is cleaned and deveined. For mussels and clams, scrub the shells and remove any beards.

    Sautéing Aromatics

    • In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.

    Deglazing

    • Pour in the white wine or cognac, stirring to deglaze the pan. Allow the alcohol to evaporate slightly, enhancing the depth of flavor.

    Building the Broth

    • Add the crushed tomatoes and fish stock to the pot. Bring to a simmer, seasoning with salt and black pepper.

    Cooking the Seafood

    • Add the mixed seafood to the pot, ensuring it is submerged in the broth. Cover and cook for about 5-7 minutes, or until the seafood is cooked through and the shells have opened.

    Finishing Touches

    • Adjust seasoning if needed. Serve the soup hot, garnished with fresh parsley and accompanied by lemon wedges and toasted garlic bread.
